In particular, when 5% of lactomil (lactose + maltodextrin) which is a mixture is added in the liquid-type starter, a survival rate which is 10 times higher than a non-added control group is shown. When 0.6% of S-1170 which is sucrose fatty acid ester is added, a survival rate which is 5 times higher than a non-added control group is shown. After adding 5% of a lactomil mixture and 0.5% of S-1170 which is a dispersion agent, the number of viable cells and bacteria contamination according to storage period and storage temperature have been confirmed. As a result, the greater number of yeasts remain when storage temperature is lower, and other harmful bacteria are not shown.
