The precipitate is ground with colloid mill to break cell wall, mixed with potassium hydroxide solution, boiled and cooled, neutralized with acetic acid to pH 6-7, vacuum concentrated, precipitated in alcohol, centrifuged for 15 min, and the precipitate is washed with 50 deg.C acetone and ethyl alcohol and vacuum dried to obtain beer yeast cell wall polysaccheride with purity higher than 83% and the yield higher than 10%.
