The present invention relates to a method for manufacturing an octopus cutlet, comprising the steps of: (1) pulverizing a part of an octopus into a size of 2 mm or less; (2) cutting the remaining octopus into a size of 5 to 10 mm; (3) mixing the octopus in steps (1) and (2), and adding ground vegetables, ground potatoes, wheat flour, curry powder, frying powder, spice, eggs, and milk to knead the same; (4) forming the dough into a form of a certain size, and applying bread crumps; (5) freezing the dough; and (6) frying the dough. The octopus cutlet manufactured by the method of the present invention has a different texture by using two kinds of octopuses having different sizes, which are ground octopus and cut octopus, provides a crispy texture by using ground potatoes in the dough, improves the taste by using curry powder, and enhances nutrition as well as taste by using vegetables, thereby contributing to the expansion of a cutlet market.
