The present invention relates to an agar paste and a production method of the same. More specifically, the present invention relates to an agar paste which forms a gel at low temperatures and can be used in high concentrations in foods in place of agar powder with high water retention; and a production method of the same. The production method of an agar paste comprises the steps of: (a) adding distilled water to agar to prepare a 1-3% agar solution; (b) adding a 0.05-0.3 M acid to the agar solution to prepare a reaction solution, and hydrolyzing the same at 40-50°C for 30-90 minutes; and (c) neutralizing the hydrolysates or removing the acid. The agar paste according to the present invention may be added to foods in higher concentrations than the agar powder that tends to gel even in low concentrations, and since the agar paste is in the state of a paste (suspension), the agar paste may be mixed evenly in foods, and further, the agar paste has antidiabetic and anti-obesity activities, ...
