During an ice cream manufacturing procedure, the greater the amount of sedum juice, the higher the air intake of ice cream. As a result of simple regression analysis, the firmness of the ice cream is significantly decreased as the amount of sedum juice to be added to the manufacture of the ice cream is increased. As a polyphenol compound is highly contained in the ice cream with the sedum juice added to the ice cream, an increase in the addition of the sedum juice leads to an increase in the radical elimination of the ice cream as a result of analyzing the ability to eliminate an organic radical with DPPH assay, which indicates a strong definition correlation (y = 1.8255x + 0.165, r^2 = 0.973, p < 0.01).
