... 본 발명은 부추장아찌의 제조방법에 관한 것으로, 부추를 선별 및 세척하는 단계; 상기 세척된 부추를 0.5~1.5%의 소금물에 0.5~2시간 실온에서 절이는 절임단계; 상기 절여진 부추를 건져내어 물기를 제거하는 단계; 상기 물기가 제거된 부추에 달임장을 부추가 잠길 정도로 부어 실온에서 2~7일간 침지시키는 침지단계; 및 상기 침지된 부추를 밀폐용기에 옮겨 4~13℃의 온도에서 1~3개월 정도 숙성시키는 숙성단계를 포함하며, 상기 달임장은 부추 100중량부를 기준으로 물 80~100중량부, 조선간장 35~40중량부, 식초 35~40중량부, 설탕 35~40중량부, 건고추 0.5~2중량부를 혼합하여 간장혼합물을 제조하고, 상기 혼합된 간장혼합물을 약한불에서 처음 부피의 40~60부피%가 되도록 달인 후, 부추발효청을 부추 100중량부를 기준으로 10~20중량부를 추가로 첨가하여 2~5분간 끓인 다음 식혀서 제조되며, 상기 부추발효청은 부추와 당성분을 1:0.7~1의 비율로 혼합하여 2~3개월간 발효시킨 후 여과하여 제조된 발효액을 1년 이상 숙성시키는 것을 특징으로 하며, 본 발명에 의해 제조된 부추장아찌는 짜지 않으면서 저장성도 더욱 뛰어나고 식감과 풍미 및 영양이 더욱 향상되는 효과가 있다.
