The present invention relates to a method of producing a solid fuel using a slaughter byproduct. More specifically, the method includes the steps of: collecting byproducts, such as gastrointestinal contents and internal organs, which are inevitably produced during slaughter; crushing the internal organs to be mixed with the gastrointestinal contents; introducing the mixture into a fermentation tank having a perforated plate formed in a lower portion thereof, and blowing air having the temperature of 40-50°C to ferment and dry the mixture for 7-8 dates; and forming the dried mixture as a pellet. According to the present invention, the solid fuel using the slaughter byproduct can be utilized as substitute for a wooden pellet. In addition, the method of treating the slaughter byproducts can improve a pollution environment problem, such as the generation of leachate or the bad odor.
